English Rout Biscuits
from the kitchen of Sharmagne Leland-St. John

4 ounces ground almonds
4 ounces castor sugar (super-fine)
A few drops of pure almond essence
2 large egg yolks
Flour and butter or oil for the cookie sheet.
Preheat the oven to 450°F.

Grease and flour a baking sheet.

Mix together the almonds and sugar, then add the
almond flavoring.

Mix to a palpable paste by adding the egg yolks. Do
not handle too much to prevent the mixture from
becoming oily.

Add a few drops of food coloring in your desired color
then roll out thickly and cut or form into desired shapes.
Hearts, rings, chicks, etc.

Bake for five minutes or until just turning brown around
the edges.
