from the kitchen of Sharmagne Leland-St.John

2 egg whites
4 ounces almonds, flaked
4 ounces icing sugar
1 ounce ground almonds
1 ounce flour
1 ounce butter, softened

Pre-heat the oven to 350°

Separate the egg whites from the yolks. Beat the egg whites
lightly. Mix the butter with the flour, almonds, sugar and
salt. Mix with the egg whites. Drop spoonfuls onto a greased
baking sheet. Cook in a moderate oven for 15 minutes. Roll
each cookie around a rolling pin to give it a curved shape.
Leave to cool.
