Lavender Tea Cakes
from the kitchen of Sharmagne Leland-St.John
1 cup sweet butter
1 cup sugar
3 eggs
1 ½ cups flour
1 teaspoon baking powder
1 ½ teaspoons lavender flowers, minced
½ teaspoon vanilla
2 tablespoons half and half
½ cup confectioner’s sugar
½ tablespoon warm water
Fresh lavender stems, for garnish
Preheat the oven to 350°.
Grease a 9-inch round pan and dust with flour.
Cream, the butter and sugar until light and fluffy.
Add the eggs and beat until the mixture is smooth and glossy.
Fold in the flour, baking powder, lavender flowers, vanilla, and half and half.
Pour the mixture into the prepared pan and bake for 35 minutes.
Let cool then remove from the pan and place on a serving plate.
Mix the confectioner’s sugar and water together then drizzle over the cake.
Cut into wedges, garnish the plate with the fresh stalks of lavender and serve
with Lady Grey tea.
