Blanche Gottlieb's Fabulous Potato Salad
from the kitchen of Kim Gottlieb-Walker
5 pounds of white rose potatoes
1 pint good mayonnaise (Best Foods, Hellmans, etc.)
1/3 cup Guilden's mustard
1 heaping tablespoon onion powder
1 teaspoon dill weed
Salt and pepper to taste
1 diced red bell pepper
Place the whole potatoes into a large saucepan.
Cover with water and bring to a boil. Turn down
heat and simmer until a fork slides in easily.
Make the dressing while the potatoes are simmering
Carefully cut the potatoes into chunks and while
they are still hot, toss with the dressing. (They
absorb the dressing better). Mix well but gently.
Add the cut up bell pepper for color and crunch.
Check for seasoning, adding more salt and pepper
if necessary. Cool and serve.
