Cajun Salmon and Spice Mix
from the kitchen of Sharmagne Leland-St. John

In a small bowl combine:
1 tsp. white pepper
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. ground red pepper
1 tsp. paprika
1 tsp. black pepper
1 tsp. kosher salt
1 tsp. cayenne
½ tsp. celery salt

Mix thoroughly. Place in an airtight container
and store in a dry place.

When ready to use, coat the salmon filet on one
side with the spice. Place in a dish loosely
covered with aluminum foil and bake for 20
minutes in a 400 degree oven or grill on the
barbecue.

Serve with lemon wedges and steamed broccoli.
