Barbecued Oysters in the Half Shell
from the kitchen of Sharmagne Leland-St. John

2 dozen medium sized oysters
Barbecue sauce, heated
¼ cup fresh parsley, chopped

Scrub the oyster shells with a stiff brush. Line
the grill with a sheet of heavy duty aluminum
foil. Place the oysters flat side up. Grill
for 5 to 10 minutes or until the shells begin
to open. When they are open remove the top shell
with a knife. Spoon the barbecue sauce over the
oysters and grill until the internal heat of the
oysters is 145º. Remove from grill and sprinkle
with the parsley.
