Agua Fresca Ice Cubes

5-6 cups of freshly scooped seedless watermelon
2 cups cold water
Simple syrup, to sweeten to taste
Place the red and pink parts of the watermelon
into the blender and pulse for a minute, then
heighten the speed.
Add the 2 cups water and blend once more.
Strain through a fine mesh sieve.
Taste and adjust the sweetness with the simple
Pour into ice cube trays and freeze.
