Watermelon Margarita
from the kitchen of Sharmagne Leland-St. John

Orange flavoured simple sugar:
½ cup white sugar
½ cup water
Zest from ½ orange


Margarita:
2 cups watermelon, seeded and cut into cubes
¾ cup good quality white tequila
¼ cup lime juice
salt or caster sugar for rimming glasses
1 lime, cut into wedges
2 cups crushed ice

In a small saucepan bring the sugar, water, and
orange zest to a boil, stirring constantly, then
simmer until the sugar is dissolved. Remove from
heat and allow to cool completely.

Place the watermelon in a blender and pulse until
puréed.

In a large pitcher mix the watermelon purée with
the simple syrup, tequila, and lime juice.

Place a small amount of Margarita salt or caster
sugar onto a saucer. Rub edge of margarita glasses
with a lime wedge to moisten. Lightly dip the rim
of the glass into the saucer to moderately rim the
glass.

Fill the glasses with crushed ice. Pour Margarita
mixture into the glasses and garnish with lime
wedges to serve.

Use approximately 1 ½ cups ice in the blender
with the margarita mixture. Blend until smooth but
still icy.
