Watermelon~Cucumber~Feta Salad
from the kitchen of Sharmagne Leland-St.John

4 cups seedless watermelon, rind removed and cubed
1 cup Persian cucumbers, sliced (approximately 2 cucumbers)
3 ounces feta cheese, cut into cubes
1 tablespoon chopped basil
1 lime, juiced
Fleur de Sel and freshly ground black pepper, to taste
Olive oil, to taste

Place the cubes of watermelon into a large salad
bowl and add the cucumber, feta and basil, then
add the lime juice. Drizzle with a little olive oil and
season with the salt and pepper. Toss to combine
and serve.
