Holiday Date Nut Spread
from the kitchen of Sharmagne Leland-St.John

1/2 cup water
1/2 pound fresh dates, pitted
1 tablespoon dark rum
2 teaspoons fresh lime juice
1 8-ounce package of cream cheese
1/2 teaspoon cinnamon
1/2 cup of pecans

Pour the water and the dates into a small saucepan.
Bring to a boil, then reduce the heat and simmer
for approximately 4 minutes or until the dates are
soft and the liquid has thickened. Allow to cool for
5 minutes. In a blender, purée the dates with the
lime juice and rum. Add the cream cheese and
cinnamon. With a spatula remove from blender.
Add the nuts and stir. Serve on very thinly sliced
brown bread.

Can also be made with feta. The sweetness of the
dates balances the saltiness of the feta in a curious
combination of tastes.
