Chanukah Apple Sauce
from the kitchen of Sharmagne Leland-St.John
8 assorted apples, washed, cored and chopped (McIntosh, Golden Delicious, Honeycrisp, Gala, etc.)
¼ cup sugar
½ Kosher salt
1 cup water
1 tablespoon freshly squeezed lemon juice
¼ teaspoon ground cinnamon
In a large pot, combine the apples, sugar, water and salt. Bring to a simmer over medium-high heat, stirring occasionally.
Reduce the heat to medium-low. Cover with a tight-fitting lid and cook for 20 minutes or until the apples are soft.
Stir in the lemon juice and the cinnamon. Let cool for 5 minutes.
Transfer the apple mixture to a blender. For safety, only fill halfway.
Remove the plastic center cap from the lid and place the lid on the blender.
Cover the blender with a kitchen towel to catch splatters. Pulse until the mixture is smooth.
Pour the applesauce into a bowl and refrigerate at least 1 hour.
Serve over latkes.
