Shrimp in Avocado Boats
from the kitchen of Sharmagne Leland-St. John

2 avocados cut in half, pit removed
2 dozen shrimp, cleaned and tail removed
Cayenne pepper, to taste
Freshly ground salt and black pepper to taste
Sesame oil
White wine

Put a couple of tablespoons of sesame oil into a skillet.
Sprinkle with the cayenne, salt and black pepper. Sauté
the shrimp until they begin to curl. Add a bit of wine and
continue to cook until sauce is warm. Place 6 shrimp into
each avocado half. Pour sauce into the hollow over the
shrimp. Serve immediately.
