Scrambled Eggs with Wild Caught Alaskan Salmon
from the kitchen of Sharmagne Leland-St. John

3 eggs
Cooked wild caught Alaskan salmon, to taste
Cream cheese, to taste

I use leftover Trader Joe's salmon for this recipe.

Crack the eggs into a bowl and whisk until combined.
Add the shredded salmon and stir until well coated.

In a frying pan, melt the butter and pour in the egg
mixture. Using a fork or wooden spoon, scramble the
eggs until almost dry, then add small chunks of the
cream cheese and continue stirring. Remove from heat
and add salt if desired.

Serve immediately.
