Turkey Tortilla Soup
from the kitchen of Trudy Escoubas

1 cup onion, chopped
1 teaspoon oil
1 4-ounce can green chiles, chopped
½ to 1 full package taco seasoning mix
1 16-ounce can tomatoes, diced, including juice
6 cups turkey or chicken broth
1 can corn
2 cups cooked turkey, cubed
Fresh cilantro, chopped
Tortilla chips (or strips)
Monterey Jack cheese, shredded or cubed

Sauté onion in oil in a Dutch oven or large saucepan. Stir in the chiles and
seasoning mix. Cook 1 minute. Add tomatoes and juice. Stir in the broth
and bring to a boil. Add the corn and turkey

Reduce heat to low and simmer for 5 minutes. Spoon over broken tortilla
chips in soup bowls. Top with cilantro and cheese.
