Spiced Walnuts
from the kitchen of Sharmagne Leland-St. John

1 egg white
1 tablespoon water
4 cups walnuts, shelled and halved
¼ cup brown sugar
1 ½ teaspoons pumpkin pie spice
1 teaspoon kosher salt
½ teaspoon allspice
¼ teaspoon cayenne
Butter

Preheat the oven to 325º F.

Lightly grease a rimmed baking sheet with the butter.
In a large bowl, whisk together the egg white and water
until well blended. Add the walnuts and toss to coat
evenly.

In another bowl, whisk together the brown sugar, salt
and spices. Sprinkle over the nuts. Toss until thoroughly
coated.

Spread the nuts in a single layer on the baking sheet
and bake for approximately 15 minutes or until the glaze
is crisp and golden brown.

Toss and cook an additional 3-5 minutes. Remove from the
oven, toss, and cool completely.

Store in an airtight container.
