New Year's Day Brunch
from the kitchen of Sharmagne Leland-St. John

Butter to grease muffin tins
1 or two large eggs per person
1 slice Canadian bacon per egg
1 tablespoon Mexican cheese blend per egg, for topping
Salt and pepper, to taste
Parsley, for garnish

Preheat the oven to 350° F.

Grease all of the muffin cups with the butter.
Place one slice of Canadian bacon into each
cup. Press to line sides and bottom.

Crack each egg separately and drop into the
tins on top of each slice of bacon. Top with
the cheese.

Put the muffin tins into the pre-heated oven.

Bake for 18 minutes for hard boiled texture
and 12 minutes for fried consistency.

Gently remove each baked egg with a spoon
and garnish with parsley.

Serve with dollar size pancakes or small waffles.
