Shrimp Won Ton Soup
From the kitchen of Victor M. Riehl

1 cup chicken broth
1 cup vegetable broth 
2 cups water 
½ cup water 
3 tablespoons miso paste
½  teaspoon oregano 
½  teaspoon fennel seeds 
¼  teaspoon red chile pepper flakes 
12 won tons
12 shrimp, uncooked and shelled
6 bok choy leaves, separated and rinsed
3 scallions, chopped 

Place 2 cups water and broth together in a soup kettle. Bring to a boil. Add all the ingredients except the miso mixture, bok choy and scallions. Return to boil. 

Add the miso paste-water mixture. Do not overcook the miso. 

Add the bok choy, heat for 2 minutes then add the scallions and serve.
