3 cups fresh strawberries, sliced and divided
2 tablespoons red wine vinegar
A pinch each of salt and pepper
5 cups fresh baby spinach
½ small red onion, thinly sliced
¼ cup almonds, thinly sliced
In a blender, combine 1 cup of the strawberries with the
red wine vinegar, salt and pepper. Blend until smooth and
Wash the spinach, drain well and place in a large salad bowl.
Toss together with the red onion and the remaining straw-
berries. Drizzle with the strawberry dressing, sprinkle
with the almonds and serve.
