Sweet Potato and Red Potato Salad
from the kitchen of Sharmagne Leland-St. John

2 large sweet potatoes, scrubbed peeled and cut into ¾-inch cubes
5 red potatoes, scrubbed and cut into ¾-inch cubes
¼ cup chopped green onions
Sesame ginger salad dressing to taste
Salt and pepper as needed

Place the potatoes in two separate saucepans and cover
with water. Bring to a boil over high heat, then turn
heat to medium-low. Cover, and cook until tender but
still firm, approximately 12 to 14 minutes for sweet
potatoes, and 10 to 12 minutes for the red potatoes.

Drain and place in a large mixing bowl. Sprinkle with
sesame ginger salad dressing and cool.

Add the green onions and toss. Salt and pepper to taste.

Chill before serving.
