Avocado Mousse
from the kitchen of Sharmagne Leland-St.John

3 large ripe avocados
1 cup sugar
¼ cup fresh squeezed lime juice
2 tablespoons Combier L'Original Liqueur d'Orange
Lime wedges for garnish

Chill the avocados.  Just before serving, cut the avocados
perfectly in half and remove the pit and pulp, keeping the
skin intact.  Whip the pulp to a smooth velvety cream with
the sugar, fresh lime juice and the liqueur.

Pipe the whipped pulp back into the skins. Serve immediately
with lime wedges.

Combier L'Original Liqueur d'Orange was the original triple sec.
Created in 1834 by confectioners Jean-Baptiste Combier and his
wife Josephine.
