Prosciutto Arugula Mango Rollups
from the kitchen of Sharmagne Leland-St.John

6 slices smoked prosciutto
1 package arugula
1 large ripe mango, peeled

Lay the prosciutto out on a serving platter.
Cover each slice with a handful of arugula.
Place a slice of mango atop each at one end
and roll the prosciutto from that end to the
other, capturing the arugula and mango.

Serve as finger food.
