Wilda’s Blueberry Bars
from the kitchen of Wilda Morris

Bars:
1 ½ cups flour
¾ cup light brown sugar, packed
¾ teaspoon baking soda
1 ½ cups quick oats
⅔ cup melted butter or margarine


Filling:
1 cup fresh blueberries
⅓ cup seedless raisins
½ cup honey
¼ cup water (or use 3 tablespoons water and 1 tablespoon lemon juice)
1 tablespoon flour

Preheat oven to 350°.

Cook the blueberries with raisins, honey
and water until the blueberries are soft, about
4-5 minutes. Sprinkle flour over top, a little at a
time. Stir and cook over low heat until
thickened. Cool.

Sift flour and soda. Add
sugar, oats, and butter. Mix well.
Pat a little more than half the
oat mixture into the bottom of a greased 8-inch
square pan. Spread filling over oat mixture.
Pat remaining oats mixture on top. Bake 30
minutes. Cool and cut into 20 bars.
NOTE: For two 9 x 13 baking dishes,
multiply the ingredients by 5.
