Bison Meatloaf
from the kitchen of Sharmagne Leland-St.John

2 pounds ground bison
2 eggs
1 large red onion, diced
⅓ teaspoon salt
⅓ teaspoon freshly ground black pepper
½ cup dried bread, cubed
¼ cup ketchup
¼ cup smoky barbecue sauce
1 tablespoon fresh sage, cut into strips
Oil for greasing the loaf pan

Preheat oven to 300º F.

Place all the ingredients except the bison and the oil
into a large bowl. Mix well. Allow to stand for 5
minutes.

Blend in the bison by hand and mold into a greased meatloaf
pan.

Bake for 40 minutes.
