Maple Walnuts
from the kitchen of Sharmagne Leland-St. John

2 cups walnut halves
non-stick spray
4 tablespoons pure maple syrup
1/2 teaspoon butter
1/8 teaspoon sea salt

Preheat oven to 350F.
Coat a large baking sheet with non-stick spray and set aside.
Put the maple syrup, butter and salt in a small skillet. Bring to
a boil and reduce heat and simmer for 2 minutes, stirring
frequently. Add the walnut halves to the maple mixture and
stir, working quickly, to coat the nuts on all sides. Transfer
walnuts to the baking sheet, drizzling any remaining maple
syrup mixture from the pan over top. Spread out in a single
layer. Bake for 15 minutes. Stir them at least once halfway
through baking, making sure to separate the nuts from one
another. Remove from oven and stir again. Allow to cool on
the sheet for 3-4 minutes then spread onto a plate to cool
completely. The walnuts will become crispy as they cool.
