Sausages and Red Peppers from the kitchen of Sharmagne Leland-St. John 2 tablespoons olive oil 2 large sausages 1 large red Bell pepper, remove seeds and slice into rounds 1 medium white onion, sliced into rounds 1 garlic clove. minced Place the sausages in a saucepan. Cover with water and boil for 10 minutes. In a large frying pan sauté the garlic and onions for 3 minutes in the oil. Add the red pepper slices and continue to sauté. Once the sausages are boiled, cut into rounds and add to the frying pan. Brown on both sides. Serve as a main dish or over pasta.
