Curried Turkey Salad Sandwiches
from the kitchen of Sharmagne Leland-St. John

2 tablespoons extra virgin olive oil
1 tablespoon plus 1 teaspoon freshly squeezed lemon juice
2 teaspoons curry powder
2 teaspoons peeled and zested fresh ginger
2 teaspoons shallot, minced
2 cups cooked, roasted turkey, cubed
½ cup Washington Delicious apple, diced
½ cup toasted, unsweetened, shredded dried coconut
¼ cup dried cranberries
3 tablespoons coarsely chopped fresh cilantro
Kosher salt
Freshly ground black pepper
Kaiser rolls

In a medium glass bowl, whisk together the yogurt,
olive oil, lemon juice, curry powder, ginger, and
shallot. Continue until smooth. Add the remaining
ingredients and season with salt and pepper. Fold
until evenly coated and combined. Serve on a toasted
kaiser roll.


Editor's Note:

Use a lemon/lime zester to "grate" the ginger into thread-like strands.
