Smoky Baked Pumpkin Cubes
from the kitchen of Sharmagne Leland-St.John

1-2 pound pumpkin
2 tablespoons extra-virgin olive oil
1 teaspoon kosher salt
1 teaspoon garlic powder
2 teaspoons smoked paprika

Preheat the oven to 450°F

Wash the pumpkin then slice it in half from top to bottom.  Scoop out the seeds and set aside for toasting.

Next slice each half into 8 crescents.  Peel the skin and cut into cubes.

Place the cubes into a large bowl.
Drizzle the olive oil over them.  Toss well to coat. Add the salt, garlic powder and smoked paprika and toss again.

Place a sheet of parchment paper on the bottom of a baking sheet with sides.  Distribute the seasoned cubes evenly.

Bake for 15 minutes. Remove from oven, turn the cubes over then cook for an additional 15 minutes or until fork tender.
