Lime Lettuce Fruit Salad
from the kitchen of Sharmagne Leland-St. John
1 small head of Lime lettuce
4 ounces green seedless grapes, sliced
1/2 cup extra sharp white cheddar cheese
1 large tart Granny Smith apple
1 tablespoon Dijon mustard
1 tablespoon white wine vinegar
1/8 teaspoon sugar
3 tablespoons sunflower oil
Salt and freshly ground black pepper
Wash and dry the lettuce. Tear into bite sized pieces.
Core the apple and slice into paper thin slices. Place
the lettuce, apple and grapes into a salad bowl.
Grate the cheese on the large end of grater and
sprinkle over the other ingredients.
For the vinagrette, put the mustard, vinegar, sugar, salt
and pepper into a small bowl and whisk. Slowly add the
oil whisking the entire time.
Pour the vinagrette over the salad, toss well. Sprinkle
the croutons over the top and serve immediately.
