Patsy's Famous Cheese Blintzes
from the kitchen of Patsy ???

Filling and Condiments

1 8-ounce package farmer's cheese
2 egg yolks
4 tablespoons sugar
Sour cream
Powdered sugar

Place the cheese in a bowl. Add the egg yolks and
sugar. Mix well and set aside. Save the sour cream
and powdered sugar to serve over blintzes.

Blintz Batter

1 cup flour
4 eggs
1/2 cup milk
1/2 water
1/2 teaspoon vanilla
Butter for oiling frying pan
Butter for frying the blintz's

In a medium sized glass bowl mix together the
flour, eggs, water, and vanilla until smooth.

Take a 7- or 8- inch omelet pan or frying pan and
rub the butter around to oil bottom and sides.

Tilt the pan and add a small amount of the batter.
Circle the pan around to distribute the batter. The
batter should cover the bottom of the pan in a thin
coating.

When the batter is set, flip over onto a warmed plate.

Place a bit more than a full teaspoon of the cheese mix-
ture onto the edge of the blintz.


Begin to roll the blintz, spreading the cheese the length
of the roll. Continue until all the blintzes have been stuffed.
Melt the butter in the pan and fry the blintzees to a golden
brown.

To serve, sprinkle a bit of powdered sugar and/or a
dollop of sour cream. You may also add a bit of cherry
jelly, strawberry jam, or fresh berries.

The blintzes can also be frozen and served at a later date.
