Cherry Buttermilk Scones
from the kitchen of Sharmagne Leland-St.John
2 cups flour
1/3 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
6 tablespoons chilled sweet butter cut into 6 pieces
1/2 cup buttermilk
1 egg
1 1/2 teaspoons pure vanilla extract
2/3 cup dried cherries
Preheat oven to 400 degrees.
In a large bowl combine all the dry ingredients (flour, sugar, baking
powder, baking soda and salt). With a pastry blender, two
knives, or with your fingers, cut in the butter until coarse crumbs
form.
In another bowl, stir together the wet ingredients. (buttermilk,
egg, and vanilla). Add the wet mixture to the flour mixture.
Stir well to combine. Stir in the dried cherries.
With lightly floured hands, pat the dough into a 1 inch thick round.
Cut into 8 wedges and place on an ungreased baking sheet. Bake
for 20 minutes or until top is slightly golden. Remove from oven
and cool on a wire rack.
Serve with mock Devon cream and cherry jam.
