1/3 cup fresh peach juice
2/3 cup good quality champagne
1 teaspoon fresh lemon juice
1 sugar cube
mint sprig for garnish
In a glass measuring cup, stir the peach juice
with the lemon juice. Pour the mixture into a
champagne flute. Gently top off the flute with
the champagne so there will be a layer of peach
juice and a layer of champagne. Pour a few drops
of the schnapps onto the sugar cubes and drop one
cube in each glass when serving. Garnish each
glass with a sprig of mint.
Substitute sparkling apple cider for the children
and eliminate the schnapps.
