Irish Oatmeal Cookies
from the kitchen of Sharmagne Leland-St. John
1 ¼ cups softened sweet butter
½ cup firmly packed brown sugar
½ cup granulated sugar
1 egg, slightly beaten
1 teaspoon pure vanilla extract
1 ½ cups all purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon, ground
3 cups quick cooking Irish oatmeal
¼ cup raisins
½ cup of chopped walnuts
Preheat the oven to 350°.
In a large bowl, cream the butter and sugars. Add the
egg and vanilla extract. Combine the flour, baking soda,
salt and cinnamon. Add to the butter mixture. Mix well.
Stir in the oatmeal, raisins and walnuts. Drop rounded
teaspoons of batter onto an ungreased cookie sheet. Bake
for 12-15 minutes. Cool for 1 minute before placing on
wire cooling rack.
