Vanilla Cake with Cream Cheese Frosting
from the kitchen of Robin Neuwirth
3 ½ cups sifted flour
2 teaspoon baking powder
1 teaspoon salt
1 ½ cups salted butter
2 cups sugar
3 eggs plus 2 egg whites
2 teaspoon pure vanilla extract
1 ½ cups buttermilk
Frosting:
1 cup butter
4 ounces cream cheese
1 tablespoon pure vanilla extract
½ teaspoon salt
1 ½ to 2 cups powdered sugar
Preheat the oven to 350°F
The Cake:
Blend the wet ingredients together. Add the dry ingredients slowly.
Pour the batter into three separate round baking pans.

Bake 25-30 minutes.
Let cool on racks before frosting.
The Frosting:
Cream together the butter, cream cheese, vanilla and
powdered sugar.
If serving for St. Patrick’s Day add a few drops of green food colouring and
shamrock sprinkles to the frosting.
