Tomato-Lime Salsa

4 firm, large tomatoes, cut into halves
1 small red onion, grated
3 cloves garlic, minced
1/2 cup cilentro, chopped
1 jalapeņo pepper, seeded and finely chopped
Juice of 1 lime
2 pinches of sugar
Salt to taste
Grate the tomatoes on the largest holes of a plastic hand grater. Do not use metal. If necessary drain off excess liquid.
you don't want it too watery. Mix in the rest of the ingredients and chill until ready to serve. Test for taste, just before serving. Add salt and more lime juice if needed.
Serve with sturdy corn chips.
