Spirited Apricot Brie
from the kitchen of MaryJo Balestreri

½ cup apricot jam
1 tablespoon grated orange rind
1 tablespoon brandy or orange juice
1 tablespoon lemon juice
½ teaspoon cinnamon
1 8-ounce wedge of Brie

Combine the first 5 ingredients in the microwave.
Cover and cook 1 ½ minutes or until bubbly.

Place the brie on top of the sauce. Cook uncovered
for an additional 30 seconds to 1 minute.


Editor's Note:
Cointreau is another excellent choice to replace the brandy.
