Homemade Tortillas
from the kitchen of Sharmagne Leland-St.John
4 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
2 tablespoons lard
½ to ¾ cup lukewarm water
Using your hands or a whisk, combine the flour, baking powder and salt in a glass bowl. Add lard to the dry ingredients and mix with hand. Add the water and form the dough into a ball. After forming the ball, rub it with a little lard. Put ball in plastic bag and let rest for 30 minutes.
Flour a rolling surface and then pinch off balls of dough between index finger and thumb and shape into mushroom like balls. Set aside.
Take each ball and pat each side on the floured surface, then roll out each into thin, flat round tortillas, cook on a comalli or griddle, turning only once. |
